Chicken Fajita Pita 1 servings 1  whole pita bread 1/2  whole skinless boneless chicken breast, cut into 1/4 inch strips 1  cup raw mushrooms, sliced 1  tomato, diced into small chunks 1  tablespoon tamari sauce, or soy sauce 1/4  cup bell pepper, chopped in 1/4 inch pieces 2  scallions, sliced or 1/8-cup diced onion 1  teaspoon fajita seasoning 1/4  teaspoon cayenne pepper 1  teaspoon garlic, minced Heat the pan on slightly above medium heat. After it's hot spray with Pam. Add tamari, fajita seasoning, garlic, bell peppers, scallions, cayenne pepper and the chicken.  Stir until the chicken is cooked. Add all of the mushrooms.  Stir until the mushrooms are well coated with the seasoning. When the mushrooms are cooked to the texture you like, remove from heat. Cut the pita to create two half-moon pockets and fill each pocket with 1/4th of the diced tomatoes.
